I would think that, as mythical creatures go, one of the large, bipedal, anthropomorphic creatures like the Yeti, or the sasquach could be a description of some as yet unknown species of primate....or perhaos the North American thunderbird could be some sort of undiscovered species of bird..other than that....only dragons or unicorns...but they have been covered so much that i don't need to go into detail on them here....

As much as I`m aware, the mythological creatures are symbolic images of people`s mistical perseptions of the world around and within thems.
And, if they are inspired by real animals, they are composite of several such, like the centaur or gargoile.

Ever seen a zebra walkin around with a big bandage on the bridge of its nose? That's the closest I've seen to a fantasy animal.

I would say a hydra, which in all likelihood would be a two headed dinosaur of some type and mythology exaggerated it to have up to nine heads.
