This is a quick one similar to one i use at home .Can't find the original i had. I don't use the mushrooms and only use the egg whites not the whole egg. Regular fine choped onions or just as good if not better. Good luck and good eating. Save me a few(lol)
2 lbs Baking potatoes [peeled]
1 Egg [beaten]
3 tlb All Purpose Flour
2 tlb Chives [fresh or frozen - snipped]
½ tsp Salt
¼ tsp Black Pepper [freshly ground]
1 tlb Butter or margarine
1 tlb Vegetable oil
4 med Mushrooms [sliced, about ¾ cup]
Coarsely grate the potatoes. ( Suppliment with your mashed ones.)
In a large bowl, combine the potatoes, egg, flour, chives, salt and pepper until they are well mixed.
In a 12-inch skillet over medium heat, heat the butter and oil until hot.
Spoon ¼ cupful of the potato mixture into the skillet.
Quickly spread the mixture into a 4-inch round; arrange some sliced mushrooms over the potato mixture;
Top with ¼ cupful of the potato mixture, sealing the edges with a fork.
Repeat with the remaining potato mixture and mushrooms to make 4 pancakes in all.
Cook the pancakes about 4 minutes on each side, or until golden and crisp, turning once.
Serve immediately with a mixed green salad and chunky applesauce.
OPTIONAL GARNISH:
In drippings remaining in skillet, saute 1 large mushroom, sliced, until lightly brown and tender.
Garnish pancakes with sliced mushrooms.

German Style Crisp Potato Panckaes
2 tablespoons fresh lemon juice
4 cups leftover mashed potatoes
1/4 cup minced onions
1 teaspoon caraway seeds, slightly crushed (optional)
2 tablespoons chopped fresh parsley
2 tablespoons unbleached flour
1 egg
1 tablespoon milk
salt or pepper
sour cream, if desired for topping
4-6 tablespoons butter (for frying)
In a large bowl combine the mashed potatoes with the lemon juice and stir well.
In a dry bowl, combine the onion, caraway seeds, fresh parsley, flour, egg and milk. Stir in potatoes. Season to taste with salt and freshly ground pepper.
Over medium heat, melt 2 to 3 tablespoons of butter in a wide frying pan. When butter starts to foam add about 2 tablespoons of the potato mixture, spreading into a 4 inch pancake. Repeat to make 2 or 3 more cakes, enough to fill the pan but not overcrowd. Cook, turn once, until golden brown on both sides about 5 minutes per side. Add more butter as needed to fry pancakes. Using a wide spatula, lift pancakes from pan and transfer to warming tray in low oven at 200 degrees. Continue cooking remainder of potato mixture.
Keep warm until ready to serve. Garnish with fresh parsley and top with sour cream if desired.

INGREDIENTS

DIRECTIONS
Mix together potatoes, beaten egg, salt, and pepper. Melt butter in a large skillet (or on a griddle) over medium heat. Using about 1/4 cup for each pancake, drop potato mixture into skillet and flatten out a bit with a spatula (about 1/2 inch thick). Fry for five minutes on first side, flip over and fry for another five or until golden brown. if you need to split this up into two batches, be sure and add another tablespoon of butter to the skillet! You should get about eight nice-sized pancakes. if you like onions, you can also add two tablespoons of finely chopped onion to the mixture before cooking.

Shepherd's pie is a common one. You can find many recipes for it. It's basically a casserole in which vegetables and ground beef are topped with mashed potatoes.

Fastest one I know: Dice one onion, fine. Stir into mashed taters. Heat skillet, oiled. Fry. Flip. Fry again, serve.
