I've never played a pokemon game - what's best to start with now?

just pick any of them. they are all decent games.

if i was to suggest FOR you, it would most likely be fire red or leaf green. emerald is decent, but i like fire and leaf

i would like to have suggested red blue or yellow, but those really are quite outdated, and can't be traded into current games because they have bugs and errors

i would also like to have suggested gold, silver or crystal, but those had even MORE bugs and messups

fire, leaf, ruby, sapphire, and emerald are the current games, and they hold up quite well. the controls are the best, and double battles offer new challenges (mostly in emerald)

because of this, those five are the ones you should choose from

I would say start at the beginning (red/blue) then, once you beta that game move up to gold/silver and just keep moving up every time you beat one.
NOTE: it goes red/blue, silver/gold, ruby/Sapphire, fire red/leaf green.
of if you want the extra one in each group. yellow, crystal, emerald.

you can start with any of them as they follow a diff story line but be carful as there is alot of fakes out there, if you wanna i have a cd that have all of the games on that you can but from me if you wanna, it cost me 7 pound without postage.
