Well, there's no intuitive answer. It's a phenomena that is described by one of Maxwell's Equations, or alternatively, by Faraday's Law. They are,

curl E = -dB/dt - Maxwell's Eq. E and B are Vectors.

Faraday's Law states, if the Magnetic Flux passing through a surface in space changes with time, the Line-Integral of an Electric Field is proportional to the rate of change of total flux crossing the closed surface associated with the Line Integral.

The Line-Integral is also know as EMF, or Electromotive Force.

It's not actually cutting, but if a wire is in a moving magnetic field, such as in the secondary of a transformer, the magnetic field causes electrons in the wire to move. Moving electrons create an electric current.

It's simply the inverse of an alternating current in a wire producing a magnetic field. The actual mathematics behind "why" it happens are kind of complex, but demonstrating the principles is easy. If you pruchase one of those flashlights that you shake and power an LED, it's the same thing. The moving part is a magnet. As the field from the magnet crosses the coils of wire, a voltage is induced in the coils that charges a capicator. The capacitor then powers the LED.

The actual power source is a magnetic field from the moving magnet.

Depends on what cuts the field. Your hand won't produce any. A wire will. But then, a wire has all of those free electrons that get pushed forward by the moving magnetic field. Your hand doesn't.

Because the flux lines 'induce' a force on any charge within the conductor. The flux lines literally wrap themselves around the wire to form a field that goes in circles around the conductor.
