Try making her feel like a princess for the day. Get up and get her her drink. Open the door for her. Rub her back, without expecting anything in return. Play Christmas music. Wisper in her ear... Your beautiful and I love you.
Sometimes these little costfree things are the best.
And maybe give her a necklace. (Mother necklace- to my childrens mother- the best mother in the world) Put the necklace on her.

If you can afford them, its true diamonds are a girls best friend.
I bought my wife a diamond necklace and matching earings last christmas, she showed them off for months and everytime she put them on she kissed and thanked me again.
I think they where the best gift I have ever given. They where not that expensive, I just don't know what I will do this year (ha ha)

jewery is always a plus but what about something she knows you really put your heart into thinking like use her intrest do that thing she has been begging you to do whether its a night of dancing or a a night at the show opra a play whatever she really loves think of some way to show her you pay attention and you put a lot of thought into if she likes skiing get her a pass or if she has that get her new snow gear or get her a ring or necklace with you her and your childrens birthstones no kids just get it with yours and hers or a necklace with 3 diamonds for the past present and future ask her mom or your mom for help or even her friends good luck whatever you pick im sure she will love it

Honestly, a whole day, just me and my hubby would be perfect - forget the diamonds.
Treat the two of you to a day at the spa - get manis and pedis together (kinda girly, but you'll like it), get the couples massage (it feels great and its very erotic and romantic). After the spa, take her to her favorite restaurant for dinner and then take her to a play/concert/sporting event (whichever she is most into).

They have these really cool pink kitchen appliances out right now because of the breast cancer awareness going on........OK.........Seriously...........Go out on the Internet (or better yet) write her a beautiful poem that tells her how amazing and wonderful a woman she is and what she means to you and how you would feel if she were not in your life...........And mushy stuff like that..........I would be thrilled to get something like that on Christmas........Of course either before the kids get up or after they go to bed so I could properly thank him. *wink*wink*
