You can sue him for treble damages (3 times what he owes you). The Labor Board takes a dim view of bosses like that and I have personally drafted a small claims lawsuit for an employee of ours and was pleased that the former boss ended up paying what he owed, plus interest, penalties, and court costs.

have some sort of proof that you did the work and were not paid- use bank statements, paycheck stubs, and witnesses
then tell the previous employer that you are going to file a small claim in court and see if that get s him to pay. use your proof to let him know he will lose.
if you can prove that you are owed money then file a claim in small claims court. you will have to carry out your threat.

Find out your state's maximum for small claims court. Gather all your documentation and go file the paperwork and sue in small claims.
Then you don't get robbed from a lawyer and if you have proof, she will be forced to deal with it.
