It depends on the type and size of orchestra. Here's a chart with info:

Depends on the size of the orchestra.
A small orchestra ("Chamber Orchestra") has about forty players.
A fullsize orchestra ("Philharmonic Orchestra" or "Symphony Orchestra") consists of over eighty and up to 104 players.
Although, there is no fixed number for the size, it rather depends on the piece; some chamber orcestras are smaller than forty players, while Richard Wagner puched the upper limit, incorporating the "Wagner tuba" and sometimes 8 harps!

There are small, medium and large orchestras. The average is around 90 full-time, and an additional 15-20 players on-call.
