Both would be improper sentences. Since you can not quantify favorite, it already identifies something as the ultimate. That would be like saying something was the "most best..."

uh yeah, adverbs aren't meant to describe, but "ultimate favorite" would be somewhat overkill, since we already know its your favorite, but nice use of a word other than "very".

yeah, it seems to me that using "ultimate" is unnecessary exaggeration.
i might say "my favorite thing, ultimately, is cheese."
keep in mind though, that "thing" is a very weak word. try using something else.

as an english student, i say that both r wrong. u cannot write 'my ultimate favourite thing' , while ultimately is absolutely wrong.
'my ultimate fav thing' can be used in oral speech but not in written work. in writing it can be written as 'my most fav thing'
