This is such a good question.

It seems like the best way is to rub your wet hands and fingers on something stainless-steel in the kitchen. You can use the faucet on the sink, a stainless-steel spoon, or the back of a stainless-steel pan. Get good contact all around your fingertip (both index fingers, for the most part.) Rinse your hands off after you're done rubbing.

u wash them right away before the wet stuff from the onion has time to dry. It also helps to keep washing them, just running water over them while u're chopping them up, like between onions or something.

Salt is a good quick way. Salt absorbs odors and the crystals scrub off just the outer layer of skin which have been exposed to the onion.

It sounds really out there, but when washing your hands with soap, hold a metal spoon, while running cold water over. It works with garlic too. I have no clue why, but I've been doing it for years.
