Ask her doctor for a statement that in his opinion she was "mentally incapable" of making an informed decision at the time she took out the credit.
Then consult a solicitor or citizens advice bureau for legal advice and then contact all the creditors armed with this information.
As a final hard push the creditors won't want you going to the press saying they sold credit to someone who wasn't mentaly fit, kinda blackmail but if needs must.

It's possible that the debts aren't valid. Debts are a form of contract, and mentally incompetent people can't generally enter into valid contracts.
The creditors aren't going to take your word for it.
