"she" is a he and if its at a particular time of day like the evening when its starting to go dark outside of the tank he may be able to see his reflection in the side of his tank and be threatening his own reflection.
When it is light outside the tank the reflection disappears and he calms down.

She may be excited at this time of the day. Opening up her gills is perfectly normal. And when you say "she", make sure it really is a "she" before putting it with another fighting fish as Betta Placat look like females but are in fact better fighters than the usual long-finned Betta Splendens.

It is aggressiveness exhibited by the Fighter fish when they are matured enough for sexual activity.This serves the purpose in two ways:
1.This attracts the Female fish for the courtship.
2.It is a warning signal for other male, two or more males trying to mate the female will enter into fighting and the one which wins will have mating with the female. This helps to get the female , the real strong partner to have a strong and healthy progeny.
The above facts are valid when they are naturally breeding, but though they are in captivity, this is an inherent trait, controlled by hormones, they tend to exhibit this aggressiveness in your Aqaurium.
One more thing ! Congratulations ! Your fish finds your aqarium quite congenial for reproduction, indicating that you are really taking good care of your fish !

Well... unless your Betta is gay... its a HE.... Male's are the ones who open up the gills.....
This happens because he is being well fed and well taken care of ... therefor he has allot of energy and gets excited during this time of the evening....
They usually do this around the female when they are about to spawn...
Have you seen any bubbles??.... Usually he will create a bubble nest and do this dance to attract the female....
And the funniest part of it is when the female comes and inspects the bubble nest.. if she doesn't like it she will not mate.....
I must tell you these are very interesting fish.....

It just gets excited. This is it's most active time of day. All of the Bettas with the pretty big fins are males by the way!

It gets active during that particular time. If you look at other bigger fishes like barramundi, their active times are early morning and evenings. This is the time when they come out to feed.

Fishes is not a word. The correct way to say it is fish. It is just like moose. There is not a such a word called mooses. These are words that first graders are suppose to know before they leave first grade. To answer your question, ask a professional. Thats what I would do.
