Agar is a sulfated heteropolysaccharide obtained from certain marine red algae. The two major components of agar are the unbranched polymer agarobiose and a branched component agaropectin. It has a remarkable gel forming property and is metabolically inert. It solidifies at 45oC.
It is mainly used as a solidifying agent in microbiological media to support the growth of bacterial colonies. Another commercial use of agar is for the capsules in which some vitamins and drugs are packaged.
The agar without agaropectin (because it interferes current conduction) is called agarose which is used as inert supports for the electrophoretic separation of nucleic acids.

Agar is extracted from seaweed. Agar , to Asians ,, is what jelly is to the West. (It's a food item.)
For some mechanical(material) reasons , the West began using this stuff in her laboratories very early on to grow fungus and plants in-vitro (under glass).
Agar mixture refers a usually , predominantly mineral(salt) mixture cured into agar jelly. Where the agar serves a purely mechanical purpose ,, that of a neutral substrate.

An agar mixture is used by mainly by microbiologists to grow micro-organisms usualy in a petri dish. Most agars are made from seaweed. I hope that helps.
