I suspect water is seeping out through the pores of marble tiles in our bathroom shower area which causes the wall behind it to show signs of humidiy. What do I use to seal marble tiles and how do I do it ?

Once the thinset has fully cured per manufacturer specifications, apply a high-quality sealer to the tile surface. This will help prevent staining during the grout application. - See more at: http://www.miconstruguia.com/en/installing-marble-tile/
