mario: partners in time was very fun. it puts mario into an rpg setting once again, and it's done spectacularly
animal crossing, while it might be childish, attunes itself to the side of you that likes collecting things.
trauma center, the game mentioned above about being a surgeon is HARD. man, i only got so far, but i just couldn't cut open nine veins, take out the boils, suture them back up, put the healing gel on them... i had hard enough time just doing THREE! fun game, and after you beat a stage, you can replay it from the start screen, so you can have friends see what the game's like without starting a new file
harvest moon DS, while it might seem childish, is VERY difficult if you don't know what you're doing. it's a game about farming, but the undertones are about life in general. getting married, getting along with neighbors, etc.
final fantasy III for the DS is coming out in a week, and tha'ts a roleplaying game that comes from a family of games stretching back almost two decades
children of mana is another roleplaying game, but set more to the action genre. the seiken densetsu series has never done bad
zelda: phantom hourglass, although it's not coming out for another five months or something, is well worth the wait, from the screenshots we've been granted
new super mario. no words needed. it's mario!
rocket slime might also seem childish, but is VERY addictive.

As is normal for nintendo the DS games tend to be targeted more towards younger/casual gamers. I am not familiar with any more "adult" titles. However, I may not know what you mean by adult. I assume you mean something more mentaly stimulating and challenging.
There is a game when you play a surgeon, not sure how it plays, but that might be a bit more fun for an adult in some cases.
Most games, even the dating game mentioned above have a very childish aspect to them. Little mini-games with bright colors and simple tasks to complete with your stylus.
However, despite the fact that almost none of their games are targted towards adults many of their games are fun for adults, games like animal crossing and nintendogs have a rather large following in the adult community.

42 all time classic games.. its called something else is the USA.. you play loads of card games like poker etc.... play with others via the internet.. can play without friends codes....
Trauma center is good but like the other person who posted i also got stuck on the very same stage... so i have given up !!!
Lost in blue is a good role playing game, my partner plays it all the time.
phoenix wright is also a role playing game but it can get very boreing quickly.
I know animal crossing is for kids but a lot of my mates have this game and love it... my partner loves this game but never tells his mates !! a lot more to this game than it seems.

I saw this game for ds like a brain quizer tetris. Like gives you math questions and you have to solve them all in certin amount of time.

there are racing games like burn out revenge(guys) nitendogs(guys&gals) and ther is a game that i forgot the name its a dating game, you can find it at most wall marts, its somthing like mystery x or somtin, lol
