As a consultant for a company, how would you convice the decison makers of the company to upgrade the company's servers from Windows 2000 or Windows NT to Windows 2003?

Working in this field... I wouldn't.

I would instead leave 2K on the current servers, and simply migrate the company to 2003 by putting the new servers in, running 2003.

Equipment failure is a given, and upgrading equipment brings the necessity of installing the new software. If the network is properly partitioned, the new servers can provide the advanced capabilities, while the older servers can run the many processes that do not require the upgrade.

If they are webservers, then IIS6 provide far more secure environment than IIS5/4 primarily due to process isolation and worker process models.
If they are file share servers, then the significant advantage would be the speed of file sharing because of different transport used by Netbios in win2k3 homogenous networks.
Terminal Services also available in all line of NT5.1/5.2 products : XP, 2003 server, 2003 enterprise and so on, unlike 2000 Servers.

um probably biggest selling point is increased stability and security and document shadowing (by far my favorite thing). Besides that the two server os's are very similar.

I actually downgraded back to 2000 from 2003 because of the lower system requirements, but thats probably not the goal of the assignment
