I've been to a few sites that show me a bunch of hotels but when I check them for the dates I want they are all booked. I would like a site that just shows hotels that have rooms avalible for the dates I'm asking for.

Well try www.expedia.com
What expedia does is that it books in bulk against some of the leading chains, like best western, comfort inn etc... and then they give it out to its members.
I sometimes find expedia rates even cheaper than what comfort inn would directly charge.
And when you search, they clearly state whether the room is not available or available

Hotels.com advertises they are the best, even showing what the rooms look like
