all saints day is to celebrate all of the saints that don't have their own day
all souls day is to celebrate the lives of all of the people that have died in the past year
they are both catholic holidays

All Saints Day was started by the Catholic Church to counteract the paganism associated with Halloween (All Hallowes Eve). All Saints Day recognizes people who are considered saints, but don't have their own day - All Souls Day is for all people who died in the past year.
