The very idea of "dancing in the spirit" is that the Spirit is leading you. There are no instructions. You cannot program the movements of the Holy Spirit. The fact that you are looking for instructions tells me that it is probably you doing the leading instead of the Spirit.

Dancing in the spirit is a very personal thing. Pray first and be still. Stand in an area with a little bit of room for moving. Shut your eyes and just imagine that you are in the room full of angels and that they are all singing the most beautiful music that you ever heard. Let yourself flow with the music. Swaying back and forth. Tilt your head back just slightly. Now open your arms about waist high. Before you know it, you will be dancing in the spirit. You can also use music.

Dancing in the spirit or Liturgical Dance is usually based on jazz dance with a mix of modern dance tossed in. It tends to be expressive and is often choreographed thought not always.
To find instructions call around to the local churches to find who is performing this style in your area -- and go visit them!
