Mace, he defeated Palpatine, so he could definitely beat Dooku. The way I see it, Mace and Dooku are more the saber type of fighter, while Yoda and Palpatine are more the force-yielding of the group. I don't see Dooku beating Palpatine in a fight.

I would say that Mace Windu would win. Based on the fact that he had beaten Palpatine until Anakin intervened, I think Dooku would be less of a challenge for Mace.

Star Wars lore and legend states that Mace Windu is probally the greatest warrior of the Jedi Order (after Yoda). Dooku, though formidable fell before Anakin. And Anakin fell before Obi-Wan and Mace is a better fighter than Kenobi. Thus Dooku would fall to Mace's superior energy-balde.
(Personally i think Palpatine threw his fight with Windu in order to fully corrupt Anakin... just my personal musings.)

Well, One-I'm sure that special effects and some stunt doubles where used. Some of it probably has to due with how well the actors take care of themselves. I'm sure Samuel L. Jackson works hard to keep in shape because of the movies he stars in. I don't think Alec Guinness was training as hard to be physical (he actually hated the Obi Wan role, and thought it was a low part of his career). If your looking for more of an in-universe answers I'd say it was because Mace, Palpatine where living in a time where being in a light-saber duel was more of an every day occurrence. By the time Obi Wan fought Vader in the Death Star, he may have let his skills lapse and his body deteriorate some. Palpatine was in a position where he had people to do his dirty work for him, herefore didn't need to keep his light saber skills up.

Count Doku uses mental games in his figths those wont work with mace, beside he is know as a great warrior
