Old Fashion Oatmeal Raisin Cookies
The secret is using regular old fashioned oatmeal (not the quick cook kind)
1 cup flour
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup (1 stick) softened butter (use margarine if butter is not available)
1 cup brown sugar (packed)
1/2 cup granulated sugar
1 teaspoon vanilla
2 eggs
3 cups old fashioned oatmeal (do not use the "quick type" of oatmeal)
1 1/2 cups raisins
Combine flour, baking soda, salt, and nutmeg in a medium bowl, blend.
In a separate bowl, combine the butter plus the brown and granulated sugars. Beat well on medium speed until the butter and sugar are creamy. Add the vanilla, beat for a minute and then add one egg at a time, beating well between eggs until well blended.
Now add your flour mixture to the butter mixture and beat until well combined. You may need to use a heavy spoon if your mixer is too small to handle the load. Stir in the oatmeal and raisins and blend all together.
Drop by heaping tablespoon, 2 inches apart, on a greased cookie sheet (parchment paper works really great). Bake in a preheated oven at 350 degrees for about 8 minutes or until the edges begin to brown. Remove from the oven, allow sit for a few minutes and then transfer to wire rack to cool completely. Makes 2 1/2 dozen cookies.

Chocolate Chunk Macadamia Cookies
1 cup butter or shortening
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
2 teaspoons vanilla extract
2 eggs
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 package chocolate chunks or chips *(White Chunks are good too!)
1 cup macadamia nuts
1. Preheat oven to 375.
2. Cream the butter& add the sugars.
3. Beat in the vanilla extract& eggs.
4. Add dry ingredients, mix well.
5. Add in chocolate chunks & nuts.
6. Combine mixture until well blended.
7. Using a medium cookie scoop (or two TB's batter) drop on ungreased baking sheet.
8. They are large,so you may need to flatten a little before baking.
9. Bake for 10 minutes.

Hot out of the oven! It could be almost any, but to pick one, I'd say peanut butter chip (like chocolate chip, only with peanut butter chips instead).
