Every time I use the a/c or defrost in my truck, the engine clicks, and the rpms go down to between 0 and 1. It happens like every three seconds. It does not happen when I have the regular heat or air on.

lol, ok well you have a typical problem, your ac system is low. its cycleing as we call it. fords are bad about this because they use quick coupler fittings on the lines and they leak, especially during the cooler months as well as when its not used. when it cycles this is why your rpm's drop.

The clicking is your a/c compressor clutch engaging. It is supposed to do this whenever the a/c or defrost is on. If its doing this as quick as every three seconds you probably have a low charge in the a/c system. The rpms will drop slightly but should stay near 800 ( the 1 actually means 1000). If it's dropping more than this there could be a bad switch or possible engine troubles.
