Bolivia is one of the most beautiful countries there is, with landscape ranging from dense Amazon rainforest to the snow-capped peaks of the Andes. I spent 2 months there a couple of years ago and had an amazing time. It's one of the poorest countries in the world with a lot of people that live in extreme poverty but are always friendly and welcoming. I'd recommend going to Lake Titicaca, the world's highest navigable lake, which borders Peru and Bolivia and where you'll find a huge lake with crystal clear water, perfectly blue skies and a backdrop of bright snow-capped peaks all around. If you want mountains there's the Cordillera Real which stretch across the Altiplano high plateau. You could also organise a trip out into virtually untouched rainforest from various towns in the north of the country such as Rurrenabaque. La Paz is worth a visit also - it's like a huge market, with stalls selling virtually everything you can think of and it's a massive city, very different to the rest of the country. Whilst there's been unrest in the past, it is usually limited to a day of protest and doesn't involve tourists. Overall I'd say it's a fantastic country and I hope to go back one day.
