What are some good/easy science fair projects for 6-8 graders?

detergent...
test which brands are better on different stains
all you need is three rags and few different kinds of detergents
and some sauce/food/liquid to make stains... like mustard, hot sauce, soda(not sprite, use something with color), or anything else...
take pictures of the procedure, and hang the rags on the 3 sided cardboard with other papers that explain the project


you could do roller coaster physics, but it would take lotsa money to buy the equipments to make it... but it's very fun.

you could build a water ride... and send the lego parts floating down.. explain why it's going down...

I remember taking leaves and placing them on litmus paper and exposing them to sunlight.. the light changed the color of the paper around teh leafe leaving a nice outline of the leaf.
Nice now that its fall and the leaves are fallin.

I also remember using a cube of ice, salt, and a string.. ask the kids how to pick up the ice cube with the string.... you lay the string across the top of the ice cube, sprinkle salt over it and wait just a couple of seconds. the ice melts just enough for the string to stick to the ice cube before it refreezes leaving the string "stuck" the ice cube, then it can be picked up.
With winter coming this could be fun to show how salt melts snow.

You could buy 3 plants and water them each with a different type of liquid. (Apple juice, sugar water, vegetable oil, etc.)
Then, record which plant grows better.
Make sure that they're the same plant and they're the same height to begin with. That's what I did in 6th grade!
