On earth, weight is defined as mass * the gravitatinal constant. Ex: kg*9.8, slug*32.2, gram*980. Weight always acts toward the center of the earth.
Normal force is simply any force perpendicular (another word for NORMAL) to a surface under consideration. An object laying on a level floor applies a normal force on the floor equal to its weight. If you tip the floor to an angle, the object will have a normal force on the floor of its weight * cos8 (8=theta) and a tangential friction force of w * sin8. These 2 forces will add vectorially to a value equal to the weight.

Weight = the force of gravity pulling toward the center of the earth. A Normal Force is the force perpendicular to the surface. Think of gluing a 1kg. mass onto a board. If the board is horizontal the 1 kg. mass will push (or pull) down with a force of 2.2 lbs. But, if the board were stood up to vertical the weight would still weigh 2.2 lbs. - but wouldn't be pushing into or away from the board at all. There would be no force Normal to the surface.

weight acts down, normal force acts normal to some surface (at right angles to the plane).
If you have a massy object on an inclined plane the weight will be mass*gravity downwards and (if the object is not sliding) this will be exactly balanced by a normal force, normal to the inclined plane and a frictional force acting in the direction of the plane (also in the same plane as g and the normal force).

normal force will be different if the object is accelerating in the y direction (up or down). Otherwise is does equal the weight. The normal force is what you "feel" as weight.
