cosi cucina has great italian food (on 86th/22nd in clive)
noah's ark is awesome, but i thought it shut down?

I was going to tell you to have "Steak deBurgo" at Johnny's Vets club in West Des Moines, but alas, they are long gone.
Instead, try:
Cafe de Scala - Italian food, Des Moines style
Star Bar - hip, smoky, and loud with great food including bar food,
Chef's Kitchen - a little bit like the old Johnny's Vets

Noah's Ark is a nice place downtown (on Grand or Ingersoll I believe), there are some very nice places in West Des Moines on University and on Westown Parkway. Spaghetti Works is also downtown on (I believe) Court Avenue, a few blocks from the Statehouse. There are several nice sit down restaurants along Court Avenue in that vicinity

Noahs ark is hard to park at. the food is ok.
there are so many different places. family style, inexpensive to very expensive.
you did not set a price range so I would suggest you pick up one of the free weeklys on any newsstand when you get there. there is a new publication just about the dinning places and it has loads of reviews.
there are several ethnic places now too so you can get any type of food from any country.
Most restraunts are very clean and very consistent with the food quality. there are old established places like Maxies, and Christophers and newer ones too.
I can't pick one over all the others as they each have unique merits.
