Have a dance off. Incorporate different cultural dances, but still make sure everyone wears wrist bands and gets really into it- in the dorkiest way possible. Ham it up and have fun. Charge people a buck to come see it.

Sell food. Have students bring in dishes traditional to their culture (you could even have people make chitlins) and charge people a flat fee to make a plate of whatever food they want.

Well, how bout doing a dance shows that shows different backgrounds. Dance is very ethnic. Every culture has it's own to speak of, then while there you could take donations. Or even, have people pay a couple bucks to see it.
Or you could do food, have people do their culture foods and buy them, like a bake sell but more ethnic.
Hope that helps!

What about having other clubs join you and you have a multi-cultural fair where other people bring dishes of food unique to their culture. Kind of like a food fair. Maybe you can even sell them at a low price and earn money at the same time. Hope it helps!

Get a typing game on the computer and have a competition to see who can types the fastest with with minimal spelling errors. You can have a small entry fee and maybe the winner wins all?? or raise money for charity. Another game could be to pull the compute cables apart and time everyone to see how long it takes them to put it all together and turn it on to windows?

There's a chocolate fundraising that my school did. It costs money to buy the chocolate, obviously, but it makes SO much.
