Kubrick shot it originally in 1.66:1 aspect ratio. Many directors of this day liked to use the "full frame" of a film print:
Full-screen presentation of The Shining and Full Metal Jacket was also approved by Kubrick, who recomposed his original framing, reportedly believing that those films looked best on video in the full-screen format. (In fact, the original theatrical aspect ratio of The Shining was 1.66:1, meaning that a relatively small portion of the image is lost.) Kubrick also chose mono over stereo, believing that inconsistencies in theatrical sound systems resulted in loss of control over theatrical presentation. In every respect, the Warner spokesman said, the films in the Collection remain as Kubrick approved them. Any future attempt to remaster or alter them would have to be approved by an appointee of the Kubrick estate.

I don't think it was shot that way.
this is the bit of info that I have and I'll pass on.
You know the "Here's Johnny" scene where Nickelson is chopping at the bathroom door with the ax. Well, the way it is shot the camera follows the ax and doesn't just stay on Nickelson. Giving a lead and follow flow to the shot. You don't just watch the ax, you are the ax ending in door, being ripped out and slammed into the door again. If that was shot with the wide screen it would look very different and silly. There wouldn't be the action that Kubrick offers.
I also think wide screen would take away from the intimacy of the movie. You feel very involved in what is going on with the family as Jack's character become more and more crazed.

Stanley Kubrick shot films in 1:66.1 aspect ration once it was clear that home video would influence movies in the form of VHS tapes. So, The Shining and Full Metal Jacket are shot in this ratio.
Eyes Wide Shut was shut in 1:85.1(which is the most common ratio), perhaps because the advent of DVD.

I don't know but the Ghost Hunters on scifi will be doing a investigation on the Stanley Hotel " the setting for the movie" @ 11:00 pm on the 31st. And they are doing it live!
