Turkey for Thanksgiving and Christmas - and for ease of cooking, roasting bags in a large roasting pan are great and they require no basting and very little cleanup!!! The best way is to put your celery stalks, onions and carrots on the bottom and put the turkey on top of them right inside of the roasting bag...this way the turkey juice is cooked with the veggies - can this can work for chicken too.
Best turkey stuffing & so easy.
Day old good quality low carb bread - 1/2 to one whole loaf - and 9-12 grain is the best.
Chop and fry in a little olive oil:
2+ large sweet onions chopped, 5+ cloves of garlic chopped
3 or more stalks of celery sliced & chopped,
Seasoning: poultry seasoning is the easiest,
otherwise, add whatever you have...& salt (I used low sodium salt and yes it's in grocery stores) and pepper to taste, and after you fry it cool for about 15 min to 1 hour, and mix with the cut up bread.
Add about 1 or 2 cups of chicken or turkey stock, from a can or carton.
Mix everything with a few beaten eggs to hold it together....if it is dry add more chicken/turkey stock.
Now put a few pads of butter in the cavity (after you clean it out and wash the turkey), and stuff as much into both cavities as you can. (I throw away those other parts in the bag..even the cats don't want it after I cooked it.)
Being Italian - some pasta - and I think small ravioli are best for the holidays with whatever sauce you have...cooked with lots of garlic and onion in the sauce.
Serve with the turkey drippings after you removed the turkey to a platter, and your veggies are already cooked and flavored.
Mashed potatoes - best are yukon gold - cooked in cubes, and then mashed with non-fat milk and olive oil, then a little butter and salt and pepper to taste.
Beverage - champagne for adults, and ginger ale (w/splenda 0 calories) for the kiddies.
Desset - pumpkin pie and Chocolate cake for me!
