a couple of years ago I started doing very detailed pics on pumpkins with a method where you poke dots along the lines of a pattern you place over the pumpkin then basically connect the dots with the knife...it turns out beautiful!

Yeah the pumpkin carving kits work really well.

But first choose your design, print it out to fit the size of your pumpkin.
Cut a hole in the top for your lid, try your best to get all the seeds and stringy stuff out.
Attach your printed design to the pumpkin with pins ir something.
Poke the edge of your design onto the pumpkin, so that you have an imprint on the pumpkin.
carve round the marks you've made in the pumpkin, and hey presto you're finished, just put a candle in

Get one of those pumpkin carving kits, some come with saws and patterns! You can make some really cool ones if you have the patience! But a good old fashion Knife works really good as well. Plan what you want, draw it on paper then transfer to pumpkin and cut!

Slice Top off. Empty seeds in bin. Make vertical cuts all round the flesh taking care not to cut through skin. Hollow out flesh with large spoon. When you have nearly reached the skin, stop. Draw features on outside then cut them out very carefully with a sharp pointed knife. Put low candle or tea light in . Replace lid. Abracadabra!

cut a zig-zag circle around the top and prise off, then scoop all the seeds out with a spoon, then cut out eyes nose and scary mouth-then you light a small candle and put it inside, switch the lights off and call the kids-then if your anything like me you have to spend the next half an hour calming them down and stopping them from crying because they think a monster is in the house!!! good luck
