Depending on the size of the group I would suggest going out into the public. Things like baseball games, football, basketball are fun. As well as taking them to say a place where you can do pottery.. Like making a vase, and then you keep it. Maybe going to the zoo, or to a science museum. If you have to stay indoors. Try to bring things to them like someone that has a farm bring a lamb or something. Or have a highschool band come and play for them. Anything but the normal everyday things is good

Crafts such as making cards and pieces of jewelry. I'm not talking complex things. But simple ones that they can feel a sense of accomplishment about and then send to their loved ones.

I've found enjoyment in working with these adults by card games , coloring, and even cooking ( cookies are great).
These adults love to feel needed and part of the little pleasures of life.....just like you or I. Many are simple children in adult bodies.

you could read to them, have show and tell, color, make door knob hangers with foam pieces and glue, have them do journal entries everyday - they don't have to write if they have difficulty they can draw.
simple and short activities since they may not have long attention spans. but please, do something with them. i visited one of these facilities and they had the clients sitting at tables staring off into space. they were not given attention and were expected to just sit quietly. how awful, they should have been engaging them in something...anything.

field day, if they are capable, you can take them to a pool or to the beach if you have one near.
