well you could get turkey breast in a pack. an cook it like you would a turkey.
for stuffing get the stove top stuffing. it might make a lot so you could cook half of it.
for gravy get a gravy pack. or. take the juice from the turkey breast and make gravy.
for mashed potatos get like 4 or 5 of them and boil them and mash them with tons of butter, sour cream, garlic, salt and peper.
yams or sweet potatos. get a few (kinda like the potatos) mash the put mini marshmallows on it and bake.
pick any veggies you want and only buy one can of each.
cranberrys 1 can.
you could make a small pumpkin pie or buy a small one. smae thing with apple pie.

Cook a whole chicken or a half turkey/ham, rolls, stuffing, corn (on cob or cream), mac & cheese or broccoli & cheese, potato salad or mashed potatoes & gravy, deviled eggs. You don't have to make a lot of this stuff (since this comes in cans or boxes) so you can cook how much you will eat. For dessert you could make 1 pie or cake of your choice. (cheesecake, pumpkin pie, sweet potatoe pie, apple pie, cherry pie or just make some banana pudding)

There are a few options here, first, you could make the normal amount, then you put the leftovers into individual servings, put them in the freezer and you have your own TV dinners with less sodium, fat, etc. as the store bought ones. Secondly, you could make a turkey breast instead of a whole turkey, and you would have less leftovers. Thirdly, if you go to the butcher, you could buy pieces of the turkey, instead of a whole one, incase you don't like white meat. You can also buy pre-sliced, pre-made turkey, stove stop stuffing, etc. and do it that way.

Go with two cornish hens stuffed with something interesting like a dried cranberry and almond cornbread stuffing. On the side, why not some turnip mashed potatoes, then some bacon wrapped asparagus for a veggie.....you can do a mango salsa for a little color if you want. For desert a pumpkin parfait is easy to do.

Hey, don't worry about it. Buy a big turkey. Cook, eat, and then freeze the left-overs for another day down the road.
There's also another thing. You just may know someone who doesn't have family to have Thanksgiving in, and you could invite them over. They'll take care of the leftovers!

I agree with Texasdream that was the first thing that came to my mind. If you dontated your left over food that would be a wonderful charitable thing to do. Im sure they will be many people out there who wont get to enjoy a wonderful Thanksgiving dinner. Donate your food to a soup kitchen or church. Im sure if you watch the local news as Thanksgiving approaches they will have info on where people can help out or donate food to less fortuante people.

Leftovers will be wonderful for the weekend.
If you don't like leftovers and don't mind nontraditional, just have your favorite luxury food and revel in it!

You could buy some turkey breasts, pound them out, put some stuffing in the middle, roll them up, and bake. Serve with gravy on top. Have some veggies and salad and a nice dessert.

Why don't you try using half of the recipe? Instead of a cup of flour use a half cup. And if you still have leftovers, either freeze it, or take it to someone who is out on the street that does not have a Thanksgiving meal.

Buy just the turkey breast, macaroni and cheese, candied yams, conbread dressing, green beans and potatoes, cranberry sauce, dinner rolls, and sweet potato pie. If you don't feel like making a pie, just buy a Mrs. Smith's apple pie. They're good.
