They have shrunk and taste bitter. Why is this?

Overfishing is the cause of the size decrease, even with land animals, many used to be larger. The bitterness of the meat is due to oil pollution and can not be removed from the flesh. The fish are able to tolerate certain pollutants but it does affect the taste...usually caused by oil but other chemicals can change the taste as well. This is why an oil spill has such a long-term effect...the fish are still there but people won't buy them.

This is because most of the polution that has went into the Mississippi has caused some issues with the fish and their habitat

if you're fishiing, I think it may just be the time of season. Give them a chance over the winter to come back to full size
