"He would roll over in his grave!" That means "he", (who is dead), would be so shocked by whatever you're talking about, he would wake from the dead, and "roll over in his grave". Since that's impossible, it's basically saying that whatever would make him "roll over" is that shocking or he would disapprove of it that much if he could find out.

A dead person would be suprised astonished or offended about what you are discussing.

it means that the dead person would be astomished if they could hear what was being said or done now
