Natural food colors are either water or oil soluble. You have to check their solubility to know which solvent to use. Examples of water soluble natural food colors are Anthocyanins, Carmine, Carmine Blue, and Chlorophyll. Water can be used as solvent for these. Examples of oil soluble natural colors are Beta APO 8 Carotenal, and Paprika. Fats and oil can be used as solvent for these.
