Either one will do. Better yet, get two. They don't like to be alone.

Girls are more territorial in the cage and are very active, they rarely sit still for more than a few seconds. Boys are lazy, and love to sit still on your lap or shoulder whilst you stroke them. Whichever you decide you should get at least two. We cant be with them 24/7 or do for them what another rat does. Is a myth that one rat bonds better than two or more. Multiple rats bons quicker and better as they learn from each other and dont want to be left out.
All rats make some noise at night, usually soon after you turn off the light. This is because their eyes are adjusting to the dark. Occasionally they may playfight during the night, but that is usually very rare. Rats are not nocturnal. They adjust to our habits, they want to be awake when we are so they can get the most attention and because they dont want to miss out on anything.

If you have never had rats before then i suggest start with males as all rats are fairly active but females moreso as they are extremely curious whereas males will sometimes sit and be cuddles :o)... others here are right, get two as they get lonely easliy.
Rats are not necessarily nocturnal, they will build a routine just like you, so if you feed them some fresh food on a morning they will learn to be awake then hence sleeping beforehand.
All of the rats i have had adapted to my routine of being up at 7am and i guess sleeping throughout the day periodically then being back up for eveining fresh food and a run out at around 8pm. I have rarely received a sleepless night due to them!
All kittens will smell a little more than adult rats it's the same as human babies smelling more (i.e. their natural bodily waste) but after about 3 months this is virtually unnoticeable as long as you have a good cleaning rota of no more than every 2 weeks.
Use a wood based litter (pets at home have their own make which is cheap and good) rather than shavings and this will reduce vet's bills as shavings potentially cause respiratory problems. Although all rats have the potential for respiratory problems they may never have them. Female rats are more prone to tumors... mammory in particular and may need an operation at some stage of their life, so again male rats are better in thois instance although they are not exempt from tumors.
Rats are by far the best rodent to go for as they all have their own personality and will respond well to you as long as you handle them from day 1 (well day 2 really, give them 24 hours to settle in!). All of mine respond to their names and run over to see me when i return home!
Hope this isn't too long winded and helps you make your decision
Regards

I found that male rat's are quieter at night, and also, they were easier to handle. I was bitten many times by various female rats, but only once by a male and he was in a lot of pain at the time.

Get two (at least) of the same sex, or prepare to neuter your male, unless you want 1-20 babies in less than a month, every month!
Females will be more active, meaning you wil spend more time with them outside of their cage. Males will love spending time just sitting in your lap getting petted! Both are great!

We've had both boys and girls and they are both lovely. You will need to get 2 though as they need companionship. Also beware of vets bills, the vets charge the same as for any larger animal and they do tend to have more problems than smaller rodents.

Girl rats are more mellow, and all rats are more active at night.
Be aware that if you get a "fancy rat" from a pet store, they are very prone to cancer/tumors.
I've had two die from cancer but they were great pets, much smarter and more sociable than hamsters or gerbils.

Male rats are lazier, yet would have a greater suitable smell than women folk. they are going to be greater in all probability to place on your lap. women folk are greater lively yet much less stinky, greater cleanly, and that i think of somewhat greater affectionate. I had one male and a pair of girls folk, and enjoyed the girls folk greater.

Neither one will sleep at night, rats are nocturnal animals.
Females tend to be somewhat more aggressive than males, but they look "neater" in the um, private area.
