Okay, I am not 100% sure on this, I am just guessing.
But, the tradition of witches wearing Pilgrim Hats might go back to that whole Salem incident, which was for a long time (and probably still is) the most famous witch-related incident in American history -- those Pilgrim Hats would have been in fashion more or less around that time, and probably was how everyone was being dressed in illustrations of the matter at least. I think it is likewise an exclusively American way to show witches looking, or was for a long time before American pop culture became so widespread.

Well David, in reality that is just a stereotype for a witch. Real witches, or Wiccans as they prefer, actually look like you or me. However I suppose that the pointy hat and large buckle type, as well as the broom, finds it's origins in American literature. It was aided by Hollywood's embellishments through motion pictures and television.

They don't . That was the fashion of head wear during the time of the Pilgrims.and the top of the at was not pointy but flattish to shed rain and leaves from the hat and keep the rain out of the wearers eyes.

The depiction of a pointed hat is outdated although I believe it represents the cone of power. Even the pope wears a pointy hat!
