Any sandwich is easy to prepare and is fairly neat. (you don't want to be dribbling all over yourself in front of someone you wish to impress.) Just make sure you wrap them up nicely in airtight bags or sandwich wrap. Avoid using lettuce or other crispy greens because they will wilt, unless you plan to assemble the sandwich on site.
If you can bring it in a cooler, then you can make or buy a potato or macaroni salad, again, to keep things simple and neat. Bring nice plastic plates and flatware so that you have less of a mess to pack home, after.
I like salty, crunchy sides, but chips and stuff can be bulky. Maybe carrot and celery sticks can pack better.
A perennial picnic favorite is fried chicken, but if you make it yourself, and plan to serve it cold, make sure you pat dry all the grease off, as much as you can. Cold, fried chicke is delicious, but the kind you get at KFC does not travel well, especially served cold.
It would be well worth the effort to bring a nice tablecloth, whether you will be eating off of a table or on a lawn. This can also be of a disposable kind, and no one will think less of you for it. Of course, bring plenty of napkins, in case something spills.
If you plan on bringing alcohol, then remember that beer HAS to be chilled. Wine travels well, and need not be chilled at all, unless you plan to bring champagne. A fruit pie is traditional, but a whole pie si way too much for two, and slices of pie are hard to carry around with out a specially made container. Home made cookies or brownies pack much easier.
Everything should be trasportable in one container, such as a basket, pack, or cooler. Remember that someone has to carry that thing, whatever you choose.

take away BBQ.
Bring an uncook meat. Along with your favorite seasoning and some stick for BBQ. Don't forget to bring some coals and the most important thing is the stove!!! It will be a yummy date picnic with a fun experiences

Avoid Chicken or any Chicken By-Product - it is inferior.
I suggest BLT Sandwiches with cheese and Apple Cider.
You could substitute ham for the Bacon - but in either case make sure that the rind has been removed.

BL T's with banana's and soda's maybe some strawberries if you want get romantic, of if the person is Jewish or vegan, toasted lettuce and tomato with Dijon mustard, it's easy and there will be no mess.
