You can give them a coat of paint. You have to prepare the surface to paint first. Give the laminate a light scratch with fine sandpaper. I would suggest semigloss and at least 2 coats with 4 coats being optimal.
You can also have them refaced, or do it yourself. There are door and drawer kits, as well.

I have a 1971 house, i thought it had new cabinets when i bought it, but after looking closely i see it had new cabinet tops and laminate, with new door fronts installed...it doesn't look half bad
When you open the cabinets and look inside, you can see the hideous dark wood veneer the original cabinets were finished in.
The laminate looks great, i would higly recomend it...it even seems like something a handy homeonwer with a router could handle...the new cabinet fronts might be a little harder, but not impossible

There's not a lot you can do. But heres a few ideas
1.If they are the vinyl covered ones.... sand them then paint them. Sprayed on paint works best.
2. Have new face frames and doors installed keeping the cabinets themselves.
As for the doors you can sometimes cut out the center section and replace with plexiglass in the routered opening. If possible a picture with your ideas would help for a more definate answer

two things come to mind, you can glue formica laminates to them, 100's of choices, or you can have cabinet fronts or faces installed with new doors
