Because it reminds us of our mothers and grandmothers. I can just taste it now: scrag end of lamb, onion, leek, potatoes...and for some reason wholemeal bread added to the mixture. Warm, slightly greasy and totally comforting and reassuring. Thank you for mentioning it! I feel better at the very thought!
By the way, the word "cawl" comes from the Latin "caulis", meaning cabbage. And yet it doesn't contain cabbage!

Dunno. I'm Welsh and I never touch the stuff as I'm vegetarian.
It reminds me of Irish stew (shudders at childhood memory).
