You could make a multi location network topology. In the project you could explain the ip addressing, routing protocols, what you would implement on your switches, such as vtp, stp, vlans, port security, etc. You could explain what type of wan you would wan to use, like dedicated lines or frame-relay and the benefits of each option. You can explain security such as firewall, ACLs, anti virus, IDS and the like. You can explain what equipment you would use, the software on the equipment suh as OS and applications, the server side applications you would use, email like Eudora or Exchange for example. These are just a range of ideas. You can get into much more detail.

Use subnets and VLSM.
Compare and choose the best protocol (OSPF!!).
Think of some easy tests that should be done when its configured to ensure its working.
Include a fully labelled network map (i.e. labelled with interfaces and IP addresses).
