Well, it all depends on what you mean by hardest. Northeast is going to be won by Buffalo (just look at how they started!) unless they get injured. Then the other teams will have to fight for a playoff position.
Pacific = hardest. This is because Dallas, Anaheim, and the Sharks are all really good teams (but I'm not saying the Northeast has bad teams). Its gonna be a really close finish in that, unless a team starts to slump. That's my opinion, but, hey, I could be wrong. Southeast is looking mediocre once again, though they have won the last two Stanley cups. But, you are probably right about that one. Though, Northwest is easy as well.

Define easiest?
Do you mean which division is the easiest to win? If that's the case than the honour goes to the Central Division. 7x in the last 9 years the winner of that division (Detroit) has had the best interdivisional record, last year Detroit only lost 3 games within it's own division (coincidently, Nashville had the second best interdivisional record!)
The toughest division to win? The difference between the interdivisional records in the Pacific Division was 9 points, and the difference from top to botton in the Southeast Division was 10 points, but three teams had 39 points.
The NHL has an internal statistic where it looks at which division is the strongest (that division's records outside it's own division) and the weakest.
Last Year, the divisions ranked as follows
Northeast Division .602
Pacific Division .596
Northwest Division .586
Southeast Division .532
Atlantic Division .514
Central Division .498

The toughest division is the Northeast, they prove it year after year.
The easiest division has become the Central. It used to be the Southeast but the Southeast Division has provided 3 of the last 4 Eastern Conference finalists. (Carolina 2002 New Jersey 2003 Tampa Bay 2004 Carolina 2006)

The Northwest is one of the toughest divisions, especially with the Oilers and Flames improving so quickly (Stanley Cup finalists last 2 years) and the Canucks are usually a playoff contender. Minnesota also looks to be a threat, starting out with a 9-1 record.
I think the easist division would be the Pacific. Either Anaheim or Dallas will win that division -- the other 3 won't even come close

I would say Northeast or Northwest. All the Canadian teams are there and there's huge pressure to win. We don't mess around when it comes to hockey. As for easiest: its a toss up between the Southeast and the Central.

i think the pacific division is the hardest
i mean you have three teams (dallas, san jose, anaheim) all fighting each other to get that first spot. the standings for the pacific division have been changing nonstop
