theres lots of instruments out there that arent widely used other than music from different ethnicities. i've seen an instrument that looked like a ceramic orb with a stick coming out the top, and there was a long wire (the same kind that pins your tire to your rims) connected to the stick on one side, and the pot on the other. you'd put your finger on it in different places, and hit it with a drumstick to make weird harmonic sounds.
the closest common thing to the description you're giving, thats used in popular folk music, is a dulcimer. thats the best i can do for you. lol.

I asked my husband who plays guitar,he never heard of a one string acouctic.
