You can begin to pick rhubarb early in spring, as soon as the stalks have attained a reasonable size. It's one of the first plants to be ready in spring. As long as you don't overdo it, you can continue to harvest right through summer. Be sure to cut back any seed stalks that may try to form.

In Ohio, the best time to harvest is in May or June. Don't harvest any stalks the first or second year after planting to allow the plant to establish.
