Everyone always says X and VII but personally I prefer IX, It's the one that I just keep going back to, they had probably some of the most interesting characters ever, very good storyline, and it's probably the easiest one of the series (some people would think that's bad, I just think it's the game to start playing if you haven't played Final Fantasy before) If they had just released it sooner on the PS1 it wouldn't have been so underrated and overlooked.

I personally think that FFIX is one of the best, because you need to learn to use each characters strengths and abilities. the others (I have I, II, IV, V, VI, VII, VIII, IX, X, X-2,and XI) tend to allow you to make all the characters do everything, something ive heard XII does as well. and so i find the fixed characters in IX a breath of fresh air...
Another reason, i loved the in depth chocobo mini-game (dig for chocographs then a world wide treasure hunt to find treasures and new abilities) - White Chocobo FTW!
Don't get me wrong, i love all the FFs, its just that to date IX is my personal favourite. (Just gotta wait now for FFIII DS, and FFXII)

VII for the simple fact that there was so much to do you could make it last over 500 hours easy.
