It stays light colored.. celery when grown under full sun , gets bitter as it grows greener and needs to be shaded. This is usually done by putting a paper bag over it if you have a home garden, or growing it in an area with an afternoon shade. Self blanching doesn't get greener, therefore; it doesn't get bitter.It also does not have the same anti-oxidant content..

Mr. Phatt is right. Blanching refers to having an almost-white appearance of the vegetable, which is actually prized by some cooks. One used to actually pull up the outside leaves of the plant and tie them around the main floret of the cauliflower; now hybridization has this colour trait already in the plant; another answerer is thinking of cooking, and that answer is right as it pertains to cooking; in gardening, this is what is meant. Some people also pull the soil up around emerging asparagus stalks so as to become blanched from lack of light exposure; myself, I'd rather have green asparagus.

blanching is a cooking term. By putting the vegetables in hot water then transferred to cold water immediately, this will help enhance the flavors.

when you take hot vegetables out of the water, you "blanch" them by immediately transferring them to cold water to stop them from cooking any further while they are still hot. Works for pasta too.
