the grease is put into special holding bins dumped and skimmed into, tin pails and then , drained into a, highly concentratedd, systemm, out back of the restauranr called a holding tank thing- then hauled away bye what they cal a recyclerr- too be reused as what ever it travels too. mandated bye state laws.

the grease is placed in a special receptacle(usually outside). There are laws against dumping grease believe it or not. Anyway, the grease is picked up once a week and it is taken to a recycling center that specializes in grease.
It is filtered, sterilized ( i am assuming) and recycled for commercial use.

A friend of mine has a few restaurants he picks up the grease and burns it in his pick up. It's a diesel with modified injectors. Kind of funny.. When he runs it, it smells like french fries... LOL

I don't know what they do with all of the used grease, but some of it is turned into a low emissions fuel, bio-diesel.
