"Paint It Black" for me.
I saw them last summer ('05) in concert and they didn't play that song (it was either they play that or "Ruby Tuesday"). I got my whole section to start chanting it but by then the lights in the stadium came back on.

It's hard to pick a favorite, but "Sympathy for the Devil" is probably it. "Paint it Black" and "Out of Tears" are close behind.
