It stands for acetylacetonate. It's just an abbreviation.

It is an abbreviation for a bidentate ligand. This means it is a ligand that binds (usually to a metal ion) twice.

acetylacetonate ion
(acac)

If you look at the chemical structure (see website below), it has two binding sites (ie the oxygen molecules) so that is why it can bind to the same metal ion twice.

If you look on wikipedia, you will see a picture of it and that it can bind to the copper ion (Cu) twice.
