Lois would make a good Dr. Crusher on ST: TNG; Quagmire would have to be the next Captain Kirk, as they're both major womanizers; Stewie WOULD be a good Q, but I think he'd also work as Grand Moff Tarkin in the first Star Wars; Meg would be an even more hapless Princess Leia; and Chris is so mixed up that he'd be a decent unwitting Annakin Skywalker, later made into a plump Darth Vader.
Peter would have to be an asteroid worm or Jabba the Hut; Brian would be a great Obi-Wan Kenobi or Spock.

I think Stewie would be funny as heck as the Alien popping out of Lois (as Bishop) in Alien.

they had stewie playing quark(sp?) from d.s.9. in one episode talking to odo... but i think peter would make a good jaba the hut
