He doesn't make the fat man cut bits off him to be skinny, he gets made to force feed himself until his stomach bursts.
Bits of skin are cut of him to leave clues though, so perhaps thats where you are getting a tad confused.

Yeah the fat man eats himself to death for gluttony and the guy in the office, I can't remember what he does, has to cut a pound of flesh because of greed. I can't imagine having to do that so I wouldn't have a clue.

ive got the film gwenith paltrows head gets cut off
and the model has her nose cut off

Well i fell asleep in the middle. Overall it was really god and well made movie, but totally depressing ! I cried ! Plus like 4 days later i watched i am legend on HBO, so I saw Will Smith kill himself 2 times in 1 week !
